MUSHROOMS BY ANTHONY COTSIFAS


In the age of hyper-local eating, farm-to-table has given way to roof-to-table, which has evolved, at places like New York’s Mission Chinese Food, into bar-to-table. Brooklyn start-up Smallhold has found a niche offering what its founder Adam DeMartino and Andrew Carter call “minifarms,” grow tanks for mushrooms that can be installed on site, turning previous calculations of food miles into a matter of food feet. Still life photographer Anthony Cotsifas showcases some of Smallhold’s most vivid specimens in our Fall 2018 issue, capturing oyster mushrooms of the blue, pink, and golden varieties glowing with otherworldly intensity.
